.. [Pacaya Harvest] Pacaya is considered a delacacy by the Maya. It is shaped like an ear of corn, but when you open the white ear there are long strands rather like a spaghetti squash on the inside. It can have a bitter taste. It is best cooked like a chile relleno—rolled in a batter and then fried.
